Funfetti Shortbread Cookies Recipe

Ingredients:

1 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 tsp. vanilla extract
1/2 tsp. almond extract
1/2 tsp. salt
2 cups all-purpose flour
2/3 cup Jimmy rainbow sprinkles

Instructions:

  1. Cream together butter and sugar using a stand mixer or hand mixer in a large bowl. Stir in vanilla and almond extracts until well combined.
  2. With the mixer on low, slowly add in the salt and flour until the mixture comes together and is no longer crumbly.
  3. Gently stir in sprinkles and mix until they are evenly distributed.
  4. Transfer the dough to a piece of wax paper and shape it into a rough log shape. Using the wax paper, roll the dough back and forth until it becomes smooth. Twist the ends of the wax paper to seal the edges. Refrigerate for at least 8 hours or overnight is preferred.
  5. When ready to bake, preheat the oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
  6. Take your prepared dough out of the refrigerator. Remove the wax paper and slice cookies to about 1/2 inch thickness. Place cookies on the prepared baking sheet at least 1 inch apart.
  7. Bake for 15-17 minutes until the edges just begin to turn slightly golden brown.
