Baked Brie Bites

It’s just like baked Brie, but bite sized! Baked Brie bites are a super easy and beautiful appetizer for parties all year round. And for holiday parties, I like to swap out the jelly for cranberry sauce and the thyme for rosemary to make them even more festive.

Baked Brie Bites Recipe

Equipment:
Mini muffin pan

Ingredients:
2 sheets puff pastry
8 oz brie cheese
6 large slices of salami (or 24 slices of mini salami)
Jelly of choice (or cranberry sauce)
2-3 sprigs of fresh thyme (or rosemary)

Directions:
Step 1
Preheat oven to 375 degrees.

Step 2
Remove puff pastry from the freezer and thaw at room temperature according to package instructions. This will take around 20-25 minutes.

Step 3
To make the Brie easier to cut, toss it in the freezer for 5-10 minutes prior to cutting.

Step 4
Once thawed, cut each puff pastry sheet into 12 pieces (4 by 3). You’ll will have 24 rectangles of puff pastry after cutting both sheets. 

Step 5
Remove Brie from freezer and cut into 24 pieces.

Step 6
If you are using larger salami pieces, cut 6 pieces of salami into quarters. If using mini salami pieces, no need to cut anything.

Step 7
Assemble. Place the puff pastry rectangles into each mini muffin cup and press down with a spoon to mold pastry dough into each cup. Layer into each cup, a piece of salami, a piece of brie, a small dollop of jelly, and top with a small spring of thyme.

Step 8
Bake for 15-18 minutes, until pastry is lightly golden. Let cool in the mini muffin pan for 5 minutes before moving baked brie bites to a serving tray.
