One-Pot Chicken and Saffron Rice

One-Pot Chicken and Saffron Rice Recipe

Equipment:
Large skillet, pot or dutch oven with lid.

Ingredients:

1 to 1 1/2 lbs of skinless, boneless chicken thighs
1 teaspoon garlic powder
2 tablespoons extra virgin olive oil (EVOO)
1 1/2 cups basmati rice
2 cups chicken stock
2 tablespoons butter
2 garlic cloves, minced
1/2 a white onion, diced
1 head of broccoli, chopped
1 teaspoon saffron
Sea salt and cracked black pepper to taste
Maldon or flaky sea salt for finishing

Instructions:

Step 1: Cook Chicken

  1. Season chicken thighs with garlic powder, salt, pepper and a light drizzle of extra virgin olive oil.
  2. Heat a skillet over medium-high heat.
  3. Add EVOO and wait for the oil to shimmer.
  4. Add chicken and cook for about 8-10 minutes, flip, and cook for another 6 minutes. Aim for the chicken to be about 80 percent done; it will finish cooking in the rice later.
  5. Remove the partially cooked chicken from the pan.

Step 2: Cook Onions

  1. In the same pan, add diced onions and season with salt and pepper.
  2. Add butter and stir, cooking the onions until translucent for about three – four minutes.

Step 3: Combine Rice, Chicken, and Broccoli

  1. Add minced garlic to the pan, stir, and cook for one minute.
  2. Put in the basmati rice, chicken stock, and saffron. Bring the mixture to a boil.
  3. Place the partially cooked chicken on top of the rice and add the chopped broccoli.
  4. Cover the skillet and let it simmer for 20 minutes on low heat.

Step 4: Allow Rice to Steam

  1. Remove the skillet from heat.
  2. Let the rice steam in the pan for 5 minutes before serving.

Step 5: Finish with Sea Salt

  1. Before serving, sprinkle flaky sea salt, such as Maldon, for a finishing touch.
