One-Pot Chicken and Saffron Rice Recipe
Equipment:
Large skillet, pot or dutch oven with lid.
Ingredients:
1 to 1 1/2 lbs of skinless, boneless chicken thighs
1 teaspoon garlic powder
2 tablespoons extra virgin olive oil (EVOO)
1 1/2 cups basmati rice
2 cups chicken stock
2 tablespoons butter
2 garlic cloves, minced
1/2 a white onion, diced
1 head of broccoli, chopped
1 teaspoon saffron
Sea salt and cracked black pepper to taste
Maldon or flaky sea salt for finishing
Instructions:
Step 1: Cook Chicken
- Season chicken thighs with garlic powder, salt, pepper and a light drizzle of extra virgin olive oil.
- Heat a skillet over medium-high heat.
- Add EVOO and wait for the oil to shimmer.
- Add chicken and cook for about 8-10 minutes, flip, and cook for another 6 minutes. Aim for the chicken to be about 80 percent done; it will finish cooking in the rice later.
- Remove the partially cooked chicken from the pan.
Step 2: Cook Onions
- In the same pan, add diced onions and season with salt and pepper.
- Add butter and stir, cooking the onions until translucent for about three – four minutes.
Step 3: Combine Rice, Chicken, and Broccoli
- Add minced garlic to the pan, stir, and cook for one minute.
- Put in the basmati rice, chicken stock, and saffron. Bring the mixture to a boil.
- Place the partially cooked chicken on top of the rice and add the chopped broccoli.
- Cover the skillet and let it simmer for 20 minutes on low heat.
Step 4: Allow Rice to Steam
- Remove the skillet from heat.
- Let the rice steam in the pan for 5 minutes before serving.
Step 5: Finish with Sea Salt
- Before serving, sprinkle flaky sea salt, such as Maldon, for a finishing touch.
