Za’atar Egg Toast

Wake up and smell the Za’atar! This easy breakfast toast packs a punch with tangy and garlicky yogurt, a perfectly boiled egg, and a generous sprinkle of Za’atar – the floral, savory, and nutty Middle Eastern spice blend that takes it over the top. Absolutely delish!

What is Za’atar?

Za’atar is a herb and spice blend from the Middle East that offers a flavorful fusion of nutty, earthy, tangy, and zesty notes, complementing virtually any dish. Za’atar ingredients vary greatly by region but it is typically comprised of a combination of dried oregano, thyme, and/or marjoram, sumac and toasted sesame seeds.

What are the best ways to eat Za’atar?

I love sprinkling this magical Middle Eastern herb blend over everything from egg toast to labneh balls (Za’atar covered cheese balls, oh my!). And don’t even get me started on how it takes flatbreads, meats, and hummus to the next level. One classic way to enjoy Za’atar is by mixing it with olive oil, creating a dip that’s perfect for bread-dipping enthusiasts.

Za’atar Egg Toast Recipe

Serves 2

Garlicky yogurt ingredients:
1 cup Greek yogurt 
1 garlic clove, grated
1/2 a lemon, juiced
1 teaspoon of chopped parsley + extra for garnish
A pinch of salt

Toast ingredients:
4 slices multigrain bread, toasted
4 boiled eggs (see guide below)
2 teaspoons za’atar for topping 

Step 1:
Mix together all of the ingredients for the garlicky yogurt in a small bowl and set in the fridge to marinate while you prepare the eggs.

Step 2:
Bring a pot of water to a rolling boil. Add your eggs with a slotted spoon. Then boil to desired consistency (I did an 8-minute egg that was medium in the yolk). Boil 6 minutes for a soft yolk, jammy middle, 8 minutes for a medium egg, 12 minutes for a fully cooked hard-boiled egg. With a slotted spoon place eggs into an ice bath to cool for 3 to 4 minutes. Peel and cut each egg in half.

Step 3:
Toast bread slices, then top each slice with 1/2 cup of garlicky yogurt, 2 egg halves, and sprinkle each slice with 1/2 teaspoon of za’atar. Top with chopped parsley and enjoy!
