Creamy Cucumber Salad

Fresh cucumber, red onions, and dill come together in a sour cream and vinegar dressing in this refreshing, creamy and tangy, side-dish. Perfect on a hot day, this salad can be made ahead of time and can be chilled until ready to serve. Enjoy with burgers and hotdogs, bbq meats, potato and pasta salads.

Ingredients you’ll need:
I prefer firm, English cucumbers but use whatever cucumber you like! You’ll need red onion, fresh dill with the stems removed, sour cream and rice vinegar.

I like to take my time and slice everything thinly by hand, but you could also use a mandolin or a food processor, which will give you more precise slices.

Creamy Cucumber Salad

Ingredients:
2 English cucumbers, sliced thin
1 red onion, sliced thin
4 tablespoons chopped dill
1/2 cup sour cream
2 tablespoons rice vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper

Instructions:

Step 1.
Thinly slice cucumbers and onions and add to a large bowl. Top with chopped dill.

Step 2.
Whisk together sour cream, rice vinegar, salt and black pepper. Pour dressing over the cucumber, onions and dill and toss to combine. Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
