One-Pan French Onion Pasta

This creamy, savory pasta dish was inspired by the flavors of a comforting bowl of french onion soup! You start by caramelized onions to add depth of flavor, then add wine, sherry or brandy, broth, seasonings, and uncooked pasta to the pan. Simmer until al dente, add in cream and top with gyueyre cheese. And the best part – everything comes together in just one pan for the easiest cleanup ever!

One-Pan French Onion Pasta Recipe

Ingredients:
2 tablespoons olive oil
2 tablespoons butter
2 yellow onions, thinly sliced
1 1/2 teaspoons kosher salt
1/4 cup sherry or brandy
1/2 cup dry white wine
2-3 springs of fresh thyme
3 cups beef broth
1/4 teaspoon freshly grated nutmeg
12 oz short cut pasta (Penne, Rigatoni, Farfalle, or Orecchiette)
1/2 cup heavy cream
1 cup grated gruyere cheese
Pepper to taste

Step 1:
Melt oil and butter in a sauté pan over medium heat. Add in sliced onions, season with salt, and stir. Cover and cook for 5 minutes. Remove the lid, stir, and turn down the heat to medium-low. Continue cooking for 30 minutes, occasionally stirring, until onions are deep brown and caramelized.

Step 2:
Deglaze the pan with sherry or brandy and white wine. Add fresh thyme springs, uncooked pasta, beef broth, and nutmeg to the pan. Bring to a boil then cover and reduce heat to medium-low and cook for 15 minutes or until pasta is al dente (according to the package instructions).

Step 3:
Turn off the heat, remove the thyme springs, and add the heavy cream and pepper. Top with grated gruyere and cover. Let the residual heat in the pan melt the cheese and then serve immediately.
