15-Minute Cherry Tomato Pasta

My quick & tasty cherry tomato sauce recipe is proof that simple is best! All you need are fresh and quality ingredients. This simple 15-minute pasta sauce consists of cherry or grape tomatoes, fresh basil, parmesan reggiano cheese and a touch of tomato paste. I love this sauce with @traderjoes Quite Possibly the World’s Largest Fusilli pasta – and so will you!

15-Minute Cherry Tomato Pasta Recipe:
16 oz grape or cherry tomatoes
1-2 tablespoons olive oil
1 tablespoon of tomato paste
3/4 cup pasta water
16 oz Trader Joe’s Quite Possibly the World’s Largest Fusilli pasta (or similar)
2 cups fresh grated parmesan reggiano cheese
1/2 cup chopped fresh basil
salt & pepper to taste

Step 1:
In a large pot, bring to boil 4 quarts of water and generously salt. When water comes to a rolling boil, add pasta and continue boiling for 12- 14 minutes for Trader Joe’s Quite Possibly the World’s Largest Fusilli pasta. If using a different pasta, follow package instructions. Drain your pasta when it’s ready but make sure to save 3/4 cup of the salted pasta water for your sauce.

Step 2:
While the pasta is cooking, add olive oil to a saucepan and heat on medium high. Add in cherry tomatoes and season with salt and pepper. Cook for 2 minutes to blister the tomato skin, stirring frequently. Then cover and reduce heat to medium. Let it simmer for 10 minutes, stirring occasionally. Add in chopped garlic and tomato paste, cover and simmer for 2 minutes. Add in fresh basil, pasta, pasta water and 1 cup of parmesan reggiano cheese and stir well. Remove from heat.

Step 3:
Serve by dividing pasta into individual bowls and top each bowl with a generous amount of remaining parmesan reggiano cheese and garnish with extra freshly chopped basil. Enjoy!
