Onion lovers, listen up! My French onion dip recipe is so easy and tasty it will make you cry tears of joy. This party-sized dip is creamy, loaded with fresh herbs and packed with irresistible onion flavor. The secret to its amazing flavor is caramelizing the onions to draw out their natural sweetness. Serve it with veggies and thick cut potato chips with ridges for scooping up all that amazing French onion dip.



Caramelized French Onion Dip:
5 medium yellow onions, peeled and thinly sliced into half moons
2 garlic cloves, minced
2 tablespoons unsalted butter
1 tablespoon olive oil
16 oz sour cream
1 cup mayonnaise
3 tablespoons fresh chives, finely chopped
1 tablespoon fresh parsley, finely chopped
kosher salt and black pepper
To serve: Thick cut potato chips with ridges (I used classic Ruffles)
Step 1:
Heat the butter and oil in a cast iron skillet or sauté pan on medium-high heat. Add in the onions and stir for 2 minutes. Sprinkle in 1 teaspoon of salt, stir again, then reduce the heat to medium-low.
Step 2:
To caramelize the onions, continue to cook on medium-low stirring the onions every 2 to 3 minutes, scraping down the sides and bottom of the pan each time. Continue this process for 45 minutes total to get perfectly caramelized onions. If they start to stick to the pan, add a tablespoon or two of water to loosen the onions and deglaze the pan.




Step 3:
When there is 1 minute left of cook time, add the minced garlic to the pan and sauté until fragrant. Transfer caramelized onions and garlic to a small bowl to cool them off in the fridge before adding them to the other ingredients.
Step 4:
In a medium sized mixing bowl, mix together sour cream, mayonnaise, 2 tablespoons of chopped chives, chopped parsley, caramelized onions (reserving 1 tablespoon for the topping) and salt and pepper to taste. Top with remaining caramelized onions and the remaining tablespoon of chopped chives. Refrigerate for at least 1 hour before serving (the flavors meld and intensify with time). Serve caramelized French onion dip with thick cut potato chips with ridges.
