My now viral recipe with over 2.7 million views on instagram is a must-try! It is made by simply roasting a block of feta cheese, cherry tomatoes, and a few simple seasonings in the oven. The end result is a salty, cheesy, garlic-y sauce that you can serve as a dip with crusty bread or just add pasta for an easy weeknight meal. Watch my viral video here.




Baked Feta and Tomato Pasta Recipe:
8 oz block of feta cheese, drained
10-12 oz package of cherry tomatoes
1/4 cup olive oil
1 teaspoon oregano
2 tablespoons chopped fresh Italian parsley
4 cloves minced garlic
1 pinch of crushed red pepper flakes
8 oz fusilli corti pasta or cavatappi pasta
Salt & freshly ground black pepper to taste
Pasta water
Fresh basil to garnish
Step 1:
Preheat oven to 400 degrees.
Step 2:
Place feta in the center of a small baking dish and arrange the tomatoes around the feta. Top with olive oil, oregano, garlic, crushed red pepper, parsley, salt and pepper to taste. Bake for 40-45 minutes until the tomatoes are bursting and the top of the feta is lightly brown.
Step 3:
In a large pot of salted boiling water, cook pasta according to package instructions and reserve 1/4 cup of pasta water before draining.
Step 4:
Remove baked feta and tomatoes from the oven and smash the tomatoes with fork. Break up the feta and stir together with the tomatoes until it becomes a sauce. Add in cooked pasta and stir well. If needed, add in the pasta water to thin the sauce. Garnish with fresh basil and enjoy!
