This tomato sauce has a secret ingredient that makes it naturally sweet and a great way to eat your veggies: carrots! It is so easy to make and uses staple ingredients you may already have at home. Plus, it is packed with so much flavor that you’ll be ditching that store bought pasta sauce from now on! Just add your favorite pasta and your mid-week meal is complete.

Homemade Tomato & Carrot Spaghetti Sauce Recipe:
28 oz San Marzano tomato sauce
2 tablespoons extra virgin olive oil
3 oz San Marzano tomato paste
1 small yellow onion, diced
4 carrots carrots, peeled & finely diced or pulsed in a food processor until fine
3 garlic cloves, minced
1/4 cup fresh Italian parsley chopped (or basil)
1 teaspoon crushed red pepper flakes
1/2 dried oregano
Salt & pepper to taste
Optional:
parmesan cheese rind


Step 1:
In a large sauce pan heat the extra virgin olive oil over medium heat. Add the onions, garlic, and carrots. and cook about 6-8 minutes, stirring regularly until softened.
Step 2:
Stir in parsley, oregano, crushed pepper flakes, oregano, and parmesan rind, if using. Add a pinch of salt & pepper. Stir in tomato paste and cook for 1-2 minutes until well incorporated.
Step 3:
Finally, add in the tomato sauce and bring it to a boil. Simmer on low with a lid for 15-20 minutes. Remove parmesan rind before serving. Serve with pasta of choice!
Pro tip:
If the sauce becomes too thick before serving, mix in a splash to 1/4 cup of pasta water before serving.
